Founded in 1725, this is the oldest restaurant in the world, according to the Guinness Book of Records. It is one of the city's classic gourmet food establishments and is a compulsory stop for travellers passing through Madrid. They specialise in suckling pig and lamb roasted in old-fashioned Castilian style in a wood burning oven that is over a hundred years old.
