It is one of the city's classic gourmet food establishments and is a compulsory stop for travellers passing through Madrid. They specialise in suckling pig and lamb roasted in old-fashioned Castilian style in a wood burning oven that is over a hundred years old. Great writers such as Hemingway, Galdós and Gómez de la Serna were once regular customers here and they mention Casa Botín in their most famous works.
